Disappointment in the Heart of Cilento

I visited Azienda Salumi Cellito with high expectations, given their reputation for traditional salumi. Unfortunately, my experience was a letdown. The salumi, while made with good ingredients, lacked the depth of flavor I've come to expect from artisanal products. The finocchietto and peperoncino powder, which I was looking forward to, were barely noticeable. The natural casings, which I appreciate for their traditional appeal, seemed to overpower the filling, making each bite feel like chewing on leather. Perhaps my visit coincided with an off day, but the products I sampled did not live up to the hype. For a company so dedicated to preserving local culinary heritage, I expected more. The climate-controlled aging process, which should enhance the flavors, seemed to have fallen short in my case. I left feeling underwhelmed and overcharged for what essentially tasted like average salumi. Unless they revisit their recipes or production methods, I fear Azienda Salumi Cellito might be resting on its laurels rather than continuously striving for excellence.
